Eco tip for the last week of September
What do you do with all those rather sad looking and wilting vegetables at the bottom of the fridge? Have you heard of 'Bottom of the Fridge' soup?
Start with a diced onion, and sweat it in some butter or oil in a pan, but then just keep adding those slightly sad vegetables (no matter if they are limp) starting with the hardest ones (carrots, celery, swede etc) and ending with the softest (tomatoes, left over salad etc). Add some water/stock, maybe a tin of chopped tomatoes and any flavourings you like (herbs, spices). For a smooth soup, you can put it in a blender. To add extra carbs, you can add a handful of pasta.
A great lunch (or lunches for a few days) which saves food waste and is DELICIOUS.
